الوصف: A Food and Nutrition Unit performs activities related to promoting better nutrition and nutrition for its diners. The nutritional evaluation is a diagnostic tool, since it evaluates by several parameters the nutritional conditions of the organism. The evaluation of food consumption is of extreme importance aiming at a better quality of life and productivity of the worker, considering the recommendations of the World Health Organization for the prevention of chronic no communicable diseases and promotion of balanced diet. The present study had as objective to relate the excess weight, food consumption and biochemical examinations of workers of the Food and Nutrition Unit of the University Restaurant. Involving 16 workers, adults, of both sexes, who accepted to participate in the research, after the signing of the Term of Free and Informed Consent. For this purpose a questionnaire was applied to identify the characteristics of the studied population, as well as the parameters such as weight, height, Body Mass Index, Waist and Hip Circumference and relations between the Waist / Hip and Waist / Height Ratios. The 24-hour Recall Survey was also applied to analyze the food consumption of this population. Biochemical tests were performed to evaluate parameters such as glucose, urea, creatinine, serum uric acid, total cholesterol, HDL-cholesterol and LDL-cholesterol, as well as triglycerides. According to the data obtained in the present study, the individuals showed variations in all anthropometric aspects evaluated, where the majority was overweight or obese, risk of cardiovascular and metabolic diseases. Relating the biochemical parameters to each other, it was observed individually that the same employees who were overweight and obese showed irregular levels of 90% of the biochemical parameters evaluated, only being in normal glucose levels.
