There is an increasing search for product standardization, cost reduction and productivity increase, through the use of improvement tools and the introduction of technological innovations. Companies usually adopt sets of techniques and tools that help in the incessant search for quality, such as Statistical Process Control (SPC). The present work aimed to apply the SPC in the fast industrial freezing technology of a bovine agriculture industry in the central region of Rio Grande do Sul, with the aid of statistical tools. The purpose was to monitoring the packaging process of cuts and avoiding unnecessary expenses and, consequently, assisting in the profitability of the industry. This is an applied and quantitative research. On-site monitoring took place from December 2019 to October 2020. Initially, a check sheet was made that enabled data collection for the study. To identify the main production bottleneck, a Pareto chart was built, which found that the zip, used to open and close the packages, out of position was the main responsible for film breaks (30.5%) , in other words, for packaging waste and delays of production. To minimize the percentage of breakages caused, a control chart was made for the proportion of packages with defects caused by zip failures. With the aid of the control chart, it was observed that as the problems shown by the check sheet were being remedied by the company, the process gained stability and the proportion of defective packages reduced significantly.
