Con este proyecto queremos presentar el diseño y elaboración de un plan de negocios que abarca el proceso de implementación de un restaurante en la ciudad de Bogotá en la zona de Usaquén; este restaurante ofrecerá un servicio de alimentación tipo gourmet y un espacio diferente bajo el concepto de galería de arte, donde los clientes podrán realizar diferentes actividades de manera simultánea. El objetivo principal del plan de negocio es tomar provecho del crecimiento del sector, poner en práctica las nuevas tendencias gastronómicas y satisfacer la curiosidad de los clientes respecto a lo novedoso que puede llegar a ser el restaurante. Analizamos diferentes tipos de variables para identificar aspectos como la calidad de los alimentos; que esperan los clientes del servicio, cuanto influye el ambiente a la hora de escoger donde comer y en general los temas relacionados a la capacidad de adquisición de cada comensal; además otras alternativas de entretenimiento y cultura que se pudieran desarrollar de manera paralela para hacer del sitio un lugar agradable, donde los comensales pueda pasar un buen tiempo con los amigos, compañeros, colegas y familiares; de esta manera identificar la oportunidad dentro del mercado y posicionar de manera efectiva el negocio. Gallery Gourmet iniciara sus operaciones con una planta de operaciones de 13 personas fijas mas lo servicios de un contador; así se espera atender la demanda inicial del restaurante. Tendrá una inversión inicial aproximada de $300.000.000, un promedio de ventas mensuales de $280.000.000, con un retorno de la inversión en 4 meses y un porcentaje de utilidad anual del 30%.
