Presence of natural antioxidants in foods is very important because these compounds not only help to preserve the organoleptic and nutritional quality of the products consumed by humans, but also because they help in a major way to preserve the health of consumers making it of paramount importance to detect antioxidant activity in a quick and easy way. Therefore, the objective of this review is to summarize the most relevant contributions in the development of analytical techniques for the detection of electrochemical power antioxidant in food and improve quality. ; La presencia de antioxidantes naturales en los alimentos es importante dado que estos no sólo contribuyen a preservar las características organolépticas y la calidad nutricional de los productos que consumimos sino porque ayudan de manera primordial a preservar la salud de los consumidores lo cual hace de suma importancia la detección de la actividad antioxidante de una manera rápida y sencilla. Por lo tanto, el objetivo de esta revisión es resumir las más relevantes contribuciones en el desarrollo de técnicas analíticas electroquímicas para la detección del poder antioxidante en los alimentos y mejorar la calidad de los mismos. |
